Ingredients

  • 6 potatoes, peeled and thinly sliced
  • 200g feta cheese, crumbled
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups radishes, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish.

  2. In a large bowl, combine the sliced potatoes, feta cheese, heavy cream, garlic, dried thyme, salt, and pepper. Mix well to coat the potatoes.

  3. Transfer the potato mixture to the prepared baking dish, spreading it out evenly.

  4. Cover the dish with foil and bake for 30 minutes.

  5. Remove the foil and bake for an additional 15 minutes, or until the potatoes are golden and tender.

  6. Meanwhile, in a separate bowl, combine the radishes, red onion, parsley, olive oil, lemon juice, honey, salt, and pepper. Toss well to combine.

  7. Serve the potato bake hot, topped with the radish slaw on the side.
