Ingredients

  • 1 cup polenta
  • 4 cups water
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 4 oz goat’s cheese
  • 2 tbsp olive oil
  • Fresh basil leaves, for garnish

Instructions

  1. In a large pot, bring the water to a boil. Gradually whisk in the polenta, salt, and black pepper. Reduce heat to low and cook, stirring frequently, for about 15 minutes or until the polenta thickens.

  2. Remove the pot from heat and let the polenta cool slightly. Then, pour the polenta onto a baking sheet and spread it out evenly to about 1/2 inch thickness. Let it cool completely.

  3. Using a round cookie cutter or a glass, cut the polenta into circles.

  4. Heat olive oil in a non-stick skillet over medium heat. Add the polenta circles and cook for about 3-4 minutes on each side or until crispy and golden brown.

  5. Remove the polenta circles from the skillet and let them cool slightly. Spread a layer of goat’s cheese on half of the polenta circles. Top with another polenta circle to create a stack.

  6. Garnish with fresh basil leaves.

  7. Serve the polenta and goat’s cheese stacks warm or at room temperature.
