  • 1.5 lbs chicken breasts, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Tortillas, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the chicken, bell peppers, onion, olive oil, fajita seasoning, salt, cumin, chili powder, garlic powder, and paprika. Mix well to coat the chicken and vegetables.

  3. Spread the chicken and vegetable mixture evenly onto a baking sheet.

  4. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

  5. Squeeze fresh lime juice over the baked fajitas and garnish with cilantro.

  6. Serve the oven-baked chicken fajitas with warm tortillas and your favorite toppings.
