  • 1.5 lbs beef sirloin
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 sprigs fresh rosemary, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, cut into wedges
  • Arugula for serving
  • Shaved Parmesan cheese for serving

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a small bowl, mix together olive oil, minced garlic, chopped rosemary, salt, and black pepper.

  3. Place the beef sirloin in a baking dish and rub the marinade all over. Let it marinate for at least 30 minutes.

  4. Heat a large oven-safe skillet over high heat. Add the marinated beef and sear on each side for 2 minutes.

  5. Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes for medium-rare. Adjust cooking time based on desired doneness.

  6. Remove the beef from the skillet and let it rest for a few minutes. Slice it thinly against the grain.

  7. Serve the beef tagliata on a bed of arugula, drizzle with any juices from the skillet, and garnish with lemon wedges and shaved Parmesan cheese.
