Ingredients
- 2russet potatoes,peeled and diced
- 2zucchinis,diced
- 2yellow squashes,diced
- 1red pepper,de-seeded and diced
- ½onion,diced
- 2sausage links,large
- 2tbspolive oil
- 2clovesgarlic,minced
- 14½oztomato,canned diced, drained
- salt and pepper,to taste

Preheat oven to 375 degrees F.

Layer all of the veggies and sausages on 1 9×13-inch baking pan, depending on the size of the vegetables.

Drizzle on olive oil, and sprinkle on the garlic, diced tomato, salt, and pepper.
