How To Make One-Pan Sausage and Veggies

Quick and tasty, this sausage and veggies recipe makes the easiest dish! A medley of bright squashes, potatoes, and peppers come together for a tasty bite.

  • 2russet potatoes,peeled and diced
  • 2zucchinis,diced
  • 2yellow squashes,diced
  • 1red pepper,de-seeded and diced
  • ½onion,diced
  • 2sausage links,large
  • 2tbspolive oil
  • 2clovesgarlic,minced
  • 14½oztomato,canned diced, drained
  • salt and pepper,to taste


  1. Preheat oven to 375 degrees F.

  2. Layer all of the veggies and sausages on 1 9×13-inch baking pan, depending on the size of the vegetables.

  3. Drizzle on olive oil, and sprinkle on the garlic, diced tomato, salt, and pepper.

  4. Bake uncovered for 1 hour.

  5. Serve and enjoy!
