How To Make Hearty Vegetarian Spinach Pot Pie with Caramelized Mozzarella Crust
Ingredients
- 2 tbsp. butter
- 10 oz. fresh spinach, bag-washed, finely chopped
- 1 red bell pepper, small, chopped (1/2 cup)
- 3/4 cup milk
- 2 tbsp. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. ground nutmeg
- 3 eggs
- 1 pkg. pie crust
- 1 cup mozzarella cheese, shredded
Instructions
- Begin by preheating your oven to 350 degrees.

Grease a 9-in. pie plate. In a 12-inch skillet, melt butter over medium heat.

Add spinach and bell pepper. Cook for about 5 minutes, stirring occasionally until spinach is wilted and bell pepper is crisp-tender.

In a small bowl, beat remaining ingredients except the cheese and pie crust with a wire whisk until smooth.
