Ingredients

  • 2 tbsp. butter
  • 10 oz. fresh spinach, bag-washed, finely chopped
  • 1 red bell pepper, small, chopped (1/2 cup)
  • 3/4 cup milk
  • 2 tbsp. all-purpose flour
  • 1/2 tsp. salt
  • 1/8 tsp. ground nutmeg
  • 3 eggs
  • 1 pkg. pie crust
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Begin by preheating your oven to 350 degrees.
  2. Grease a 9-in. pie plate. In a 12-inch skillet, melt butter over medium heat.

  3. Add spinach and bell pepper. Cook for about 5 minutes, stirring occasionally until spinach is wilted and bell pepper is crisp-tender.

  4. In a small bowl, beat remaining ingredients except the cheese and pie crust with a wire whisk until smooth.

  5. Pour over vegetables in skillet, stirring to mix.

  6. Pour filling into the pie plate.

  7. Add pie crust over the top and sprinkle the mozzarella cheese over the pie crust.
  8. Bake for about 35-40 minutes until the crust is golden brown and the center is set. Let cool and serve.
