How To Make Monterey Chicken

Inspired by a Chili’s favorite, this Monterey chicken recipe is chicken breasts, bacon, cheese, and tomatoes baked in a savory barbecue sauce.

Ingredients

  • 4chicken breasts,boneless, skinless
  • 1tbspolive oil
  • salt and pepper,to taste
  • 1cupbarbecue sauce
  • 1cupcheese,shredded
  • 4slicesbacon,cooked and crumbled
  • ½cuptomatoes,diced
  • ¼cupgreen onions

Instructions

  1. Heat the olive oil in a large oven-safe pan over medium-high heat. Preheat the oven to 400 degrees F.

  2. Season the chicken on both sides with salt and pepper to taste.

  3. Cook the chicken for 4 to 5 minutes on each side, or until done. Cook time may vary depending on the thickness of your chicken.

  4. Pour the barbecue sauce over the chicken. Sprinkle ¼ cup of cheese over each chicken breast.

  5. Place the pan in the oven for 3 to 5 minutes, or until cheese is melted.

  6. Sprinkle the bacon, tomatoes and green onions over the chicken and serve.
