Individual Three-Cheese Veggie Quiches Recipe

Quiches are known as French tarts that contain a savory filling with a custard base. Our quiches recipe serves for one person each and is packed with three different kinds of cheese. No more fighting about slice sizes! Whether it’s for brunch or dinner, surprise each guest with a cheesy quiche of their own with this simple and yummy recipe.

Ingredients

  • 6 eggs, beaten
  • 1 pkg pastry dough, refrigerated
  • 1 cup cherry tomatoes
  • 2 cup spinach, chopped
  • 1/4 cup green onions, chopped
  • 1/2 cup milk
  • 1 cup Swiss cheese
  • 1 cup Ricotta cheese
  • 1/2 cup Parmesan cheese
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Roll the dough out to the size of your small quiche dishes and set aside.

  3. In a bowl, whisk the eggs and milk together with salt and pepper, then add tomatoes, spinach, Ricotta and Parmesan cheeses; mix thoroughly.

  4. Place the rolled dough in your greased quiche dishes, then pour the mixture into them. Sprinkle Swiss cheese on top and bake for 25-35 minutes, depending on the size of your quiche dishes.

  5. Garnish with green onions and serve!
