This savory square is made up of grated zucchini and Bisquick mix. It's seasoned with herbs and tasty parmesan cheese.

Ingredients

  • 3 cups zucchini, grated unpeeled
  • 1 cup Bisquick mix
  • ½ cup onion, finely chopped
  • ½ cup parmesan cheese, grated
  • 2 tbsp parsley, snipped
  • ¼ tsp salt
  • ½ tsp dried oregano leaves
  • dash pepper
  • 1 clove garlic, finely chopped
  • ½ cup of vegetable oil
  • 4 eggs, slightly beaten

Instructions

  1. Preheat oven to 350 degrees F.

  2. Grease oblong pan, 13x9x2.

  3. Mix all ingredients thoroughly in a large bowl.

  4. Pour into pan and spread evenly.
  5. Bake until golden brown, about 45 minutes (maybe 10 minutes longer).
  6. Cut into pieces 1 or 2 inches.
  7. Serve warm. Makes 4 dozen appetizers.
