  • 4 chicken breasts
  • 1 lemon
  • 2 cloves of garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 can of Tuscan beans, drained and rinsed
  • Fresh parsley for garnish


  1. Preheat the oven to 375°F (190°C).

  2. Season the chicken breasts with salt, pepper, dried oregano, and dried thyme.

  3. Heat olive oil in a large oven-safe skillet over medium-high heat.

  4. Sear the chicken breasts for 3-4 minutes on each side, until golden brown.

  5. Slice the lemon into thin rounds and place them on top of the chicken breasts.

  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.

  7. Meanwhile, in a separate pan, heat 1 tbsp olive oil and sauté minced garlic until fragrant.

  8. Add the Tuscan beans to the pan and cook for 3-4 minutes, until heated through.

  9. Season the beans with salt and pepper to taste.

  10. Serve the herby lemon chicken on a plate, with a side of Tuscan beans.

  11. Garnish with fresh parsley.
