  • 4 chicken thighs, bone-in and skin-on
  • 4 potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.

  3. Add the chicken thighs and potatoes to the bowl and toss until evenly coated in the marinade.

  4. Transfer the chicken thighs and potatoes to a baking dish, arranging them in a single layer.

  5. Pour any remaining marinade over the chicken and potatoes.

  6. Bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.

  7. Remove from the oven and let it rest for a few minutes.

  8. Garnish with fresh parsley and serve hot.
