- 4 chicken thighs, bone-in and skin-on
- 4 potatoes, peeled and cut into wedges
- 1/4 cup olive oil
- Juice of 2 lemons
- 4 cloves of garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, for garnish

Preheat the oven to 425°F (220°C).

In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
