For an impressive side dish that goes perfectly with any meat, try these Hasselback potatoes. They’re seasoned with a medley of herbs and a lot of garlic.

  • 5pcsrusset potatoes
  • salt and pepper,to taste
  • ½cupbutter,melted
  • 1tspfresh parsley,finely chopped
  • 1tspfresh thyme,finely chopped
  • 1tspfresh rosemary,finely chopped
  • 3clovesgarlic,minced


  1. Preheat the oven to 425 degrees F. Wash and scrub the potatoes. Slice the potatoes thinly leaving a half an inch base at the bottom. Salt and pepper the potatoes.

  2. In a small bowl combine melted butter, parsley, thyme, rosemary and garlic. Place the potatoes in a 9×13-inch backing dish. Brush the garlic herb butter along the tops of the potatoes.

  3. Roast the potatoes for 40 to 60 minutes or until fork tender.
