How To Make Easy Stuffed Zucchini Boats

Take a scrumptious bite of these stuffed zucchini boats packed with ground beef, bell peppers, and tomatoes topped with cheese.

Preparation: 15 minutes
Cooking: 25 minutes
Total: 40 minutes

Serves:

Ingredients

  • 2large zucchini
  • 1onion
  • 1clovegarlic
  • 1lbground beef
  • 1tomato,diced
  • 1bell pepper,diced
  • 1cuppasta sauce,or marinara, divided
  • tspItalian seasoning
  • ¼tsppepper
  • 1cupmozzarella cheese,divided

Instructions

  1. Preheat oven to 400 degrees F.

  2. Brown ground beef, onion, and garlic until no pink remains. Drain any fat.

  3. Stir in ½ cup pasta sauce, tomato, bell pepper, and Italian seasoning. Let simmer for 10 minutes. Remove from heat and stir in ½ of the cheese.

  4. Slice zucchini lengthwise and scoop out the center to create a shell, then place in a baking dish. Fill each zucchini with ¼ of the beef mixture.

  5. Spread the remaining ½ cup pasta sauce over the zucchini boats and top with the remaining cheese.

  6. Bake for 25 minutes or until zucchini is soft and cheese is bubbly.
