How To Make Deep Dish Chocolate Chip Brookie

This brownies and cookies mashup is made easier with the help of a skillet! Chocolate chips and cocoa powder are mixed for fudgy chocolate chip brookie.

For Brownie Layer:

  • 12tbspunsalted butter,(1½ sticks) cut into 1 tbsp-sized pieces
  • ½cupsemisweet chocolate chips
  • ½cupnatural cocoa powder
  • ¾cupsugar
  • ¾cupbrown sugar,light or dark, tightly packed
  • 2large eggs,plus 1 egg yolk
  • 1tspvanilla extract
  • ½tspsalt
  • 1cupall purpose flour
  • ½cupsemisweet chocolate chips

For Cookie Layer:

  • ¾cupbutter,softened
  • ¾cupbrown sugar,light or dark, tightly packed
  • 1egg,plus 1 yolk
  • 1tspvanilla extract
  • 2cupsall purpose
  • tspcornstarch
  • ½tspbaking powder
  • ¾tspsalt
  • 1cupsemisweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F and lightly grease a 10-inch cast iron pan with butter. Set aside.

Brownie Layer:

  1. Combine butter and chocolate chips in a large, microwave-safe bowl and heat in 20 second increments, stirring well in between, until chocolate and butter are melted and well-combined.

  2. Add cocoa powder and stir well, then stir in sugars.

  3. Add eggs, egg yolk, vanilla extract, and salt, and stir until very well combined.

  4. Gradually add flour and stir until incorporated. Fold in chocolate chips. Set aside while preparing the cookie layer.

Cookie Layer:

  1. Using an electric mixer, cream together butter and sugars until well-combined.

  2. Add egg, egg yolk, and vanilla extract and stir well.

  3. In a separate, medium-sized bowl, whisk together flour, cornstarch, baking powder, and salt.

  4. Gradually add flour mixture to butter mixture and stir until combined. Fold in chocolate chips.

  5. Alternate dropping brownie batter and cookie dough by heaping spoonfuls into prepared cast iron pan. Use a knife to swirl the batter evenly.

  6. Transfer to oven and bake for 40 to 50 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

  7. Allow to cool a bit after baking and serve warm. Enjoy!
