  • 1tbspcooking oil
  • 1red bell pepper
  • 2scallions,including green tops
  • 1carrot
  • 8ozcream cheese
  • 1tspsalt
  • ½tspfresh ground black pepper
  • 4chicken breasts,(about 2¼ lbs in all), bone in


  1. Heat the oven to 425 degrees F.

  2. In a medium frying pan, heat the oil over moderate heat. Add the bell pepper and cook, stirring occasionally, for about 3 minutes, until starting to soften. Add the scallions and carrot and cook 2 minutes longer.

  3. Mix the vegetables with the cream cheese, ¾ teaspoon of the salt and ¼ teaspoon of the black pepper.

  4. Sprinkle the chicken breasts with the remaining ¼ teaspoons of salt and pepper. Put the breasts in a roasting pan and spread them with the vegetable cream cheese.

  5. Bake the chicken for 20 to 25 minutes, until just done.

  6. Serve warm, and enjoy!
