Cheesy Pasta Veggie Bake Recipe

Pasta is a definite crowd pleaser and this recipe is no exception. It is easy to prepare and all the melted cheese makes it absolutely delicious. For a heartier version, add in some cooked chicken. Use skim milk, whole wheat pasta and low-fat cheese to make it healthier.

You can enjoy a creamy and filling pasta with this cheesy paste veggie recipe. It is also healthy and super easy to cook. The cauliflower makes it a healthier option for those on a diet.

Ingredients

  • 2 tbsp butter, melted
  • 1 tbsp garlic powder
  • Tbsp flour
  • 12 oz evaporated milk
  • pinch salt
  • tsp cayenne pepper
  • 2 cups cheddar cheese, divided, shredded
  • 1 cup cauliflower
  • 1 pkg cherry tomatoes
  • 1 box penne pasta, cooked

Instructions

  1. Preheat oven to 350 degrees F.

  2. Over medium heat combine butter, garlic, and flour. Cook for 2 minutes.

  3. Stir in milk, salt, and cayenne pepper. Cook until boiling.

  4. Remove from heat. Add half of the cheese. Stir until melted.

  5. Add pasta and vegetables. Toss.

  6. Spread into casserole dish. Cover with foil.

  7. Bake for 15 minutes. Uncover and top with remaining cheese. Bake until cheese is melted.
