How To Make Campfire Grilled Potatoes

Grilled potatoes flavored with garlic powder and Italian seasoning are the perfect camping dish. You can opt to cook these in the oven if desired.

Preparation: 5 minutes
Cooking: 25 minutes
Rest Time: 10 minutes
Total: 40 minutes

Serves:

Ingredients

  • 2tspcoarse salt
  • 2tspitalian seasoning,optional
  • 1tspblack pepper
  • 1tspgarlic powder
  • 4smallpotatoes,(6 oz), unpeeled
  • 2tbspolive oil

Instructions

  1. Preheat an outdoor grill or bring a campfire to medium heat (325 degrees F to 375 degrees F).

  2. Mix together salt, Italian seasoning, pepper, and garlic powder in a bowl. Pierce potatoes in several places with tines of a fork. Rub about 1½ teaspoons oil onto each potato, then rub evenly with spice mixture.

  3. Put each potato onto a 12×12-inch sheet of heavy-duty foil. Wrap foil around potatoes and seal edges tightly, then wrap each packet with another sheet of foil.

  4. Grill packets, or nestle them into hot embers, rotating every 5 minutes, until potato flesh is soft. This will be about 25 minutes total.

  5. Let rest 10 minutes before opening. Serve with favorite toppings.

Baked:

  1. Preheat oven to 400 degrees F. Prepare packets (skip the extra layer of foil) and transfer to a baking sheet.

  2. Roast for about 45 minutes until potatoes are softened. Let rest 10 minutes before opening.
