This mouthwatering make-ahead breakfast casserole is made with wheat bread, savory sausage, cheese, and mushrooms for a delicious way to start your day.

  • 8ozwheat ciabatta bread,cut into 1-inch cubes
  • 12ozturkey breakfast sausage
  • 2cupsfat-free milk
  • cupreduced-fat sharp cheddar cheese,(4 oz), shredded
  • 10large eggs
  • ½cupgreen onions,chopped
  • 1cupmushrooms,sliced
  • ½tsppaprika
  • 1tspkosher salt
  • 2tbspgrated parmesan cheese


  1. Preheat oven to 400 degrees F.

  2. Arrange bread cubes on a baking sheet. Bake at 400 degrees F for about 8 minutes or until toasted.

  3. Heat a medium skillet over medium-high heat. Add sausage to pan; cook for about 7 minutes or until browned, stirring to crumble.

  4. Combine milk, cheese, eggs, parmesan cheese, paprika, salt and pepper in a large bowl, stirring with a whisk.

  5. Add bread, sausage, scallions, and mushrooms, tossing well to coat the bread. Spoon mixture into a 13×9-inch baking dish. Cover and refrigerate for about 8 hours or overnight.

  6. Preheat oven to 350 degrees F.

  7. Uncover casserole. Bake at 350 degrees F for about 50 minutes or until set and lightly browned.

  8. Cut into 8 pieces then serve immediately.
