Baked Salmon & Lentils Recipe

Enjoy a serving of this comfortingly tasty baked fresh salmon mildly-spiced with lentils. Not only is it easy and quick to make, but it is also healthy!

  • 1tbspolive oil,plus an additional 2 tsp, divided
  • 2salmon filets
  • ½red onion,diced
  • 2cupslentils,cooked
  • ½tspcumin,ground
  • ½tspcoriander,ground
  • ¼tspblack pepper
  • tspsalt
  • ½cupcilantro,fresh, chopped
  • 1lemon,quartered


  1. Preheat the broiler. Prepare a baking sheet with aluminum foil, then mist with oil or cooking spray.

  2. Place the salmon filets on the baking sheet, and brush each with about 1 teaspoon of oil. Season liberally with salt and black pepper.

  3. Broil for 4 to 5 minutes, or until cooked through. Cooking time will depend on the thickness of your salmon.

  4. Meanwhile, heat 1 tablespoon of oil in a medium skillet over medium-high heat. Add the diced red onion and sauté for 2 minutes until partially cooked. Add the lentils, cumin, coriander, black pepper, and salt. Stir to combine.

  5. Cook for an additional 2 minutes, or until the lentils are heated through. Remove from heat and stir in fresh cilantro.

  6. Serve lentils topped with the fresh salmon, sprinkled with the juice from the lemons to taste.
