Enjoy a serving of this comfortingly tasty baked fresh salmon mildly-spiced with lentils. Not only is it easy and quick to make, but it is also healthy!

Ingredients
- 1tbspolive oil,plus an additional 2 tsp, divided
- 2salmon filets
- ½red onion,diced
- 2cupslentils,cooked
- ½tspcumin,ground
- ½tspcoriander,ground
- ¼tspblack pepper
- ⅛tspsalt
- ½cupcilantro,fresh, chopped
- 1lemon,quartered
Instructions

Preheat the broiler. Prepare a baking sheet with aluminum foil, then mist with oil or cooking spray.

Place the salmon filets on the baking sheet, and brush each with about 1 teaspoon of oil. Season liberally with salt and black pepper.

Broil for 4 to 5 minutes, or until cooked through. Cooking time will depend on the thickness of your salmon.

Meanwhile, heat 1 tablespoon of oil in a medium skillet over medium-high heat. Add the diced red onion and sauté for 2 minutes until partially cooked. Add the lentils, cumin, coriander, black pepper, and salt. Stir to combine.

Cook for an additional 2 minutes, or until the lentils are heated through. Remove from heat and stir in fresh cilantro.

Serve lentils topped with the fresh salmon, sprinkled with the juice from the lemons to taste.
