Ingredients

  • 1 whole rabbit, cut into pieces
  • 200g chorizo, sliced
  • 2 cups rice
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 bell peppers, diced
  • 1 can diced tomatoes
  • 3 cups chicken broth
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large oven-safe skillet, cook the chorizo until browned. Remove from skillet and set aside.

  3. Season the rabbit pieces with salt and pepper, then brown them in the same skillet over medium heat. Remove and set aside.

  4. In the same skillet, sauté the onion, garlic, and bell peppers until softened.

  5. Add the rice to the skillet and cook for a few minutes, stirring constantly to coat the rice with the flavors.

  6. Stir in the diced tomatoes, paprika, cumin, chicken broth, and cooked chorizo. Season with salt and pepper.

  7. Arrange the rabbit pieces on top of the rice mixture in the skillet.

  8. Cover the skillet with aluminum foil and bake in the preheated oven for 1 hour.

  9. Remove the foil and continue baking for an additional 20 minutes, or until the rice is cooked and the rabbit is tender.

  10. Serve the baked rabbit and chorizo rice hot, garnished with fresh parsley.
