How To Make Baked Eggs with Wilted Baby Spinach

Whip up a quick breakfast with these easy baked eggs. They’re served over spinach sauteed with shallots, garlic, and Asiago cheese.

Ingredients

  • 2tspolive oil
  • ¼cupshallots,diced
  • lbbaby spinach,large stems removed
  • 4large eggs
  • salt and freshly ground pepper,to taste
  • 2tbspAsiago cheese,shredded
  • baking spray

Instructions

  1. Preheat an oven to 400 degrees F. Lightly spray four oven-safe dishes or ramekins with cooking spray.

  2. Heat a large skillet over medium-low heat, add oil, shallots and cook for 2 to 3 minutes.

  3. Add spinach, salt, and pepper, and cook for about 2 to 3 minutes until the spinach wilts. Mix in Asagio cheese and remove from heat.

  4. Divide the wilted spinach among the oven-safe dishes, making a well in the center of each.

  5. Break an egg into each dish and season with salt and pepper.

  6. Place the ramekins on 1 or 2 rimmed baking sheets and bake for about 17 minutes or to liking. Cook until the whites are set and the yolks are firm around the edges but still soft in the center.

  7. Serve immediately.
