How To Make Baked Cuban Mojo Chicken
Impress your guests with this Cuban chicken dish that is marinated in mojo – oranges and herbs – producing a tangy meal with an impressive depth of flavor.

Ingredients
- 2lbsbone in chicken thighs and chicken drumsticks
For Marinade:
- ⅓cupextra virgin olive oil
- ½cupcilantro leaves,lightly packed
- 1tsporange zest
- ⅓cuporange juice
- ¼cuplime juice
- ¾tspdried oregano
- 1tspcumin powder
- 1½tbspfresh mint leaves
- 4clovesgarlic
- 1tspsalt
- ½tspblack pepper
Optional Garnishes:
- 1orange,cut into wedges
- cilantro leaves,for garnish
Instructions

Place the marinade ingredients in a food processor. Blend until the cilantro is finely chopped.

Pour the marinade over chicken in a large bowl. Cover with cling wrap and marinate for 12 to 36 hours.

Preheat oven to 350 degrees F.

Place chicken in a baking pan, and scrape in the residual marinade in the bowl. Place thighs skin side down. Add orange wedges, if using.

Bake chicken for 30 minutes. Remove and turn chicken. Spoon over pan juices.

Bake for a further 20 minutes or until the skin is nicely browned. Rest for 5 minutes then serve!
