How To Make Baked Chicken with Dijon and Lime

Even without the skins, this baked chicken still makes a tasty meal! It’s made with a creamy Dijon and lime coating to brown the meat to juicy perfection.

Ingredients

  • 8chicken drumsticks,skin removed
  • 3tbspdijon mustard
  • 1tbsplight mayonnaise
  • 1garlic clove,crushed
  • 1lime,squeezed, zested
  • ¾tspblack pepper
  • kosher salt,to taste
  • 1tspdried parsley

Instructions

  1. Preheat the oven to 400 degrees F.

  2. Rinse the chicken and remove the skin and all fat. Pat dry, then place in a large bowl and season with salt.

  3. In a small bowl, combine the Dijon, mayonnaise, lime juice, lime zest, garlic and pepper. Mix well.

  4. Pour the over chicken, tossing well to coat.

  5. Spray a large baking pan with a little Pam, then place the chicken to fit in a single layer. Top the chicken with dried parsley.

  6. Bake for about 35 minutes until cooked through. Finish the chicken under the broiler for 2 to 3 minutes, until golden brown.

  7. Serve warm, and enjoy!
