Baked Cauliflower Mac and Cheese Recipe

How To Make Baked Cauliflower Mac and Cheese

Try something new for dinner tonight with our flavorful baked cauliflower! We’ve cooked it up to look and taste like mac and cheese for a unique twist.

Preparation: 15 minutes
Cooking: 35 minutes
Total: 50 minutes



  • 8cupscauliflower florets,chopped, ½ -inch pieces
  • 1tbspReal California butter
  • 2tspolive oil
  • ¼cuponion,minced
  • 3tbspflour
  • 2cupsReal California milk,fat free
  • 7ozReal California sharp cheddar,freshly grated, about 2 cups total
  • ½tspsalt


  1. Preheat the oven to 400 degrees F.

  2. Place 1 inch of water in a large pot with 1 teaspoon of salt, then bring to a boil.

  3. Add the cauliflower, then cook for 6 to 7 minutes until tender crisp.

  4. Drain and set aside in a large bowl.

  5. Heat the butter and oil in a large saucepan over medium heat.

  6. Add the onions, then cook for 2 minutes.

  7. Stir in the flour.

  8. Reduce the heat to low and cook, stirring continually for 3 to 4 minutes, to cook out the flour.

  9. Add the milk and continue whisking for 2 minutes, raising heat to medium-high until it comes to a boil and becomes smooth and thick.

  10. Season with ½ teaspoon salt and black pepper.

  11. Once thickened, remove from heat completely.

  12. Add the cheddar cheese, ¼ cup at a time, mixing well until the cheese is all melted.

  13. Stir in the cooked cauliflower, then pour into a baking dish.

  14. Bake for 15 to 20 minutes until bubbly and golden.

  15. Broil for 2 minutes, or until the top is slightly browned.

  16. Serve warm, and enjoy!
