How To Make Baked Artichokes with Eggs

Enjoy filling bites of quail eggs, savory cured Spanish ham, and tender artichokes by whipping up these appetizing baked artichokes!

  • 1canwhole artichoke hearts,in olive oil
  • 6quail eggs
  • 1slicejamon serrano,or spanish cured ham
  • extra virgin olive oil,spanish
  • sea salt


  1. Preheat the oven to 325 degrees F.

  2. Drain the artichokes. Place 6 of the largest artichoke hearts in an oven safe skillet bottom-side down. Trim the bottom side of the artichoke if necessary to help it lie flat.

  3. Using a spoon, widen the hole in the center of each artichoke to create a cup. Carefully open a quail egg using a paring knife. Slide the raw egg into the center of the artichoke.

  4. Repeat with remaining eggs. Sprinkle the eggs with a little salt.

  5. Place the artichokes in the oven for 3 to 4 minutes until they set

  6. Sprinkle the artichokes with ham, then drizzle with olive oil and season to taste with salt.

  7. Serve and enjoy!
