  • 4 lb sweet potatoes, boiled, drained, peeled, and cut into ¼ inch thick rounds
  • 2 lb tart apples, peeled, quartered, cored, and cut in ¼ inch thick slices
  • ¾ cup brown sugar, packed
  • ½ cup unsalted butter , or margarine
  • 1 tbsp freshly orange peel, grated
  • ¾ cup orange juice
  • cup maple syrup , or maple flavored pancake syrup
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg


  1. Preheat oven to 375 degrees F.

  2. Lightly grease a 13x9x2 inch baking dish.

  3. Arrange slices in the baking dish, alternating sweet potatoes, and apple slices, slightly overlapping,

  4. In a small saucepan, stir the sugar and butter together over medium heat until the butter melts.

  5. Add the orange juice, orange zest, maple syrup, nutmeg, and cinnamon. Bring to a boil, stirring until smooth.

  6. Pour the mixture over the sweet potatoes and apple slices, making sure it is evenly distributed.
