Ingredients

  • 2 cups of rhubarb, chopped
  • 1 cup of ginger ale
  • 1/4 cup of fresh lime juice
  • 1/4 cup of honey
  • 2 cups of sparkling water
  • Ice cubes
  • Lime slices, for garnish

Instructions

  1. In a blender, puree the rhubarb until smooth.

  2. In a large pitcher, combine the rhubarb puree, ginger ale, lime juice, and honey. Stir well to mix.

  3. Fill serving glasses with ice cubes.

  4. Pour the rhubarb mixture over the ice, filling each glass about halfway.

  5. Top up the glasses with sparkling water.

  6. Stir gently to combine.

  7. Garnish each glass with a slice of lime.

  8. Serve immediately and enjoy!
