Ingredients

  • 1 can of black-eyed peas, drained and rinsed
  • 1/2 red onion, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1 jalapeno, seeded and finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 2 tablespoons of red wine vinegar
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. In a medium bowl, combine the black-eyed peas, red onion, red bell pepper, jalapeno, and garlic.

  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

  3. Pour the dressing over the black-eyed pea mixture and gently toss to combine.

  4. Allow the flavors to marinate for at least 10 minutes.

  5. Serve the Poor Man’s Caviar with tortilla chips.
