Ingredients

  • 2 cups of whey protein powder
  • 1/2 cup of almond flour
  • 1 tsp of baking powder
  • 1/2 tsp of salt
  • 1/2 cup of honey
  • 1/4 cup of melted coconut oil
  • 2 tsp of vanilla extract
  • 1/2 cup of dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, whisk together whey protein powder, almond flour, baking powder, and salt.

  3. In a separate bowl, mix together honey, melted coconut oil, and vanilla extract.

  4. Gradually add the honey mixture to the dry ingredients and mix until well combined.

  5. Fold in the dark chocolate chips.

  6. Scoop rounded tablespoons of dough and place onto the prepared baking sheet, spacing them apart.

  7. Flatten each cookie slightly with the back of a spoon.

  8. Bake for 8-10 minutes or until the edges are golden brown.

  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

  10. Transfer to a wire rack to cool completely.
