Ingredients
- 1 cup cooked jerk chicken, shredded
- 1 cup cabbage, thinly sliced
- 1/2 cup carrots, grated
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1 tsp jerk seasoning
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 12 egg roll wrappers
- Vegetable oil, for frying
- Mango-Habanero Sauce:
- 1 ripe mango, peeled and diced
- 1 habanero pepper, seeded and finely chopped
- 1/4 cup lime juice
- 2 tbsp honey
- 1/4 tsp salt
Instructions

In a large bowl, combine the shredded jerk chicken, cabbage, carrots, green onions, cilantro, jerk seasoning, garlic powder, and salt. Mix well.

Lay an egg roll wrapper on a clean surface, then place about 2 tablespoons of the chicken mixture in the center of the wrapper.

Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll up tightly, sealing the edges with a bit of water. Repeat with the remaining wrappers and filling.

Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Fry the egg rolls until golden brown and crispy, about 3-4 minutes. Remove from the oil and let drain on a paper towel-lined plate.

To make the mango-habanero sauce, combine the diced mango, chopped habanero pepper, lime juice, honey, and salt in a blender or food processor. Blend until smooth.
