  • 2 packets of instant oatmeal
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large bowl, combine the instant oatmeal, flour, brown sugar, baking powder, and salt.

  3. In another bowl, whisk together the milk, vegetable oil, vanilla extract, and egg.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
