Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 4 fresh figs, diced

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

  3. In a separate large bowl, cream together butter and sugar until light and fluffy.

  4. Beat in eggs, one at a time, then stir in vanilla extract.

  5. Gradually mix in the dry ingredients and buttermilk, alternating between the two, beginning and ending with the dry ingredients.

  6. Gently fold in the diced figs.

  7. Pour the batter into the prepared cake pan and spread it evenly.

  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.

  10. Serve the fresh fig cake as is or sprinkle with powdered sugar.
