How To Make Rarebit Toasts

  • 4 slices of bread
  • 200g Cheddar cheese, grated
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 100ml ale or beer
  • Salt and pepper to taste


  1. Preheat the oven to 180°C (350°F) and toast the slices of bread until lightly golden.

  2. In a saucepan, melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly.

  3. Gradually whisk in the ale or beer until smooth and thickened.

  4. Reduce the heat to low and stir in the grated cheese, Dijon mustard, Worcestershire sauce, salt, and pepper. Cook until the cheese has melted and the mixture is smooth.

  5. Place the toasted bread slices on a baking sheet and spread the cheese mixture evenly over each slice.

  6. Bake in the preheated oven for 10-12 minutes until the cheese topping is bubbling and golden.

  7. Serve the rarebit toasts hot and enjoy!
