Ingredients

  • 4 eggs
  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup chestnut flour
  • 1/4 cup amaretto liqueur
  • 1 cup chestnut puree
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/4 cup crushed amaretto cookies

Instructions

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, beat the eggs and sugar together until pale and fluffy.

  3. Sift in the all-purpose flour and chestnut flour, then gently fold into the egg mixture.

  4. Pour the batter onto the prepared baking sheet and spread it evenly.

  5. Bake for 10-12 minutes, or until the sponge is golden and springs back when gently touched.

  6. While the sponge is baking, prepare the filling by whisking the chestnut puree and amaretto liqueur together in a bowl.

  7. In another bowl, whip the heavy cream and powdered sugar until soft peaks form.

  8. Once the sponge is cooled, carefully roll it up with the parchment paper, starting from one end.

  9. Unroll the sponge and spread the chestnut puree mixture evenly over it.

  10. Spread the whipped cream on top of the chestnut mixture and roll the sponge back up.

  11. Place the roulade on a serving platter and dust with powdered sugar.

  12. Sprinkle the crushed amaretto cookies on top for added crunch and flavor.

  13. Chill in the refrigerator for at least 2 hours before serving.

  14. Slice the roulade into thick slices and enjoy!
