  • 1 can of black beans, rinsed and drained
  • 1 avocado, diced
  • 1 tomato, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • Juice of 1 lime
  • 2 tablespoons of chopped cilantro
  • Salt to taste

Instructions

  1. In a medium bowl, combine the black beans, avocado, tomato, red onion, and jalapeno pepper.

  2. Squeeze the lime juice over the mixture and sprinkle with salt.

  3. Gently toss everything together until well combined.

  4. Stir in the chopped cilantro.

  5. Refrigerate for at least 30 minutes to allow the flavors to meld.
