How To Make Authentic Mexican Shrimp Cocktail (Coctel de Camarones estilo Mexicano)

Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup tomato juice
- 1/4 cup ketchup
- 2 tablespoons lime juice
- 1 jalapeno pepper, seeded and finely chopped
- 1/2 cup diced cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- Salt to taste
- Tortilla chips, for serving
Instructions

Bring a large pot of water to a boil. Add the shrimp and cook for 3-4 minutes, or until pink and cooked through. Drain the shrimp and transfer to a bowl of ice water to cool. Once cooled, drain again and chop into bite-sized pieces.

In a large bowl, combine the tomato juice, ketchup, lime juice, jalapeno pepper, cucumber, red onion, and cilantro. Mix well.

Add the chopped shrimp and diced avocado to the bowl and gently toss to combine. Season with salt to taste.

Divide the shrimp cocktail into serving glasses or bowls. Garnish with additional cilantro and a lime wedge if desired.

Serve with tortilla chips for dipping.
