Ingredients

  • 2 chicken breasts, grilled and sliced
  • 8 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup whole wheat croutons
  • Caesar dressing (see directions for homemade recipe):
  • 1/4 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the romaine lettuce, sliced grilled chicken, cherry tomatoes, grated Parmesan cheese, and croutons.

  2. To make the homemade Caesar dressing, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, minced garlic, grated Parmesan cheese, salt, and pepper in a small bowl.

  3. Drizzle the Caesar dressing over the salad and toss to combine.
