Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.

  2. Heat the olive oil in a large skillet over medium heat.

  3. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.

  4. In the same skillet, add the chopped onion and minced garlic. Cook until the onion is soft and translucent, about 3 minutes.

  5. Add the sliced bell peppers and mushrooms to the skillet. Cook until the vegetables are tender, about 5 minutes.

  6. Stir in the dried oregano, dried thyme, and paprika. Cook for an additional minute.

  7. Pour in the chicken broth and bring to a simmer. Cook for 2 minutes.

  8. Stir in the heavy cream and bring to a low boil. Reduce the heat and simmer for 5 minutes, or until the sauce has thickened slightly.

  9. Return the chicken breasts to the skillet and spoon the sauce over them. Cook for an additional 5 minutes, or until the chicken is cooked through.

  10. Serve the chicken continental recipe hot, garnished with fresh parsley.
