  • 4 boneless, skinless chicken breasts
  • 1 cup crabmeat
  • 1/4 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Using a sharp knife, make a horizontal slit in each chicken breast to create a pocket for stuffing. Be careful not to cut all the way through.

  3. In a mixing bowl, combine the crabmeat, bread crumbs, Parmesan cheese, mayonnaise, parsley, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix well.

  4. Spoon the crabmeat stuffing into the pocket of each chicken breast, dividing it evenly among them.

  5. Heat a skillet over medium-high heat and add a drizzle of oil. Sear the chicken breasts for 3-4 minutes on each side until golden brown.

  6. Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.

  7. Serve the chicken breasts stuffed with crabmeat hot with your favorite side dishes.
