Ingredients

  • 1 lb chicken breast, cut into small pieces
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup corn kernels
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chicken and cook until browned. Remove from the pot and set aside.

  2. In the same pot, add the onion and garlic. Cook until softened.

  3. Add the carrots, zucchini, bell pepper, and corn. Cook for a few minutes until slightly tender.

  4. Return the chicken to the pot. Add the chicken broth, diced tomatoes, dried thyme, salt, and pepper. Stir to combine.

  5. Bring the stew to a simmer and let it cook for about 30 minutes, until the chicken is cooked through and the vegetables are tender.

  6. Serve the stew hot, garnished with fresh parsley.
