How To Make BBQ Roast Chicken & Chunky Chips

Ingredients

  • 1 whole chicken
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 large potatoes, cut into thick wedges
  • Salt and pepper to season the potatoes

Instructions

  1. Preheat your BBQ grill to medium-high heat.

  2. Rinse the chicken and pat it dry with paper towels.

  3. In a small bowl, mix together olive oil, paprika, garlic powder, onion powder, salt, and black pepper.

  4. Brush the chicken with the spice mixture, making sure to coat it evenly.

  5. Place the chicken on the grill, breast-side down, and cook for about 15 minutes.

  6. Flip the chicken and continue grilling for another 15 minutes.

  7. Reduce the heat to medium-low and cover the grill. Cook for about 1 hour, or until the internal temperature reaches 165°F (75°C).

  8. While the chicken is cooking, prepare the chunky chips. Place the potato wedges in a bowl and drizzle with olive oil. Season with salt and pepper, then toss to coat.

  9. Arrange the potato wedges on a baking sheet and bake in a preheated oven at 400°F (200°C) for about 30 minutes or until golden brown and crispy.

  10. Once the chicken is cooked, remove it from the grill and let it rest for about 10 minutes before carving.

  11. Serve the roast chicken with the chunky chips.
