Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 bell peppers (red, yellow, or orange), thinly sliced
  • 1 red onion, thinly sliced
  • 3 cups mixed salad greens
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat.

  2. Season the chicken breasts with salt, pepper, and oregano.

  3. Grill the chicken for about 6-8 minutes per side, or until cooked through. Let it rest for a few minutes, then slice it.

  4. In a large bowl, combine the sliced peppers, red onion, salad greens, olives, and feta cheese.

  5. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.

  6. Pour the dressing over the salad and toss to combine.

  7. Divide the salad among 4 plates and top each with the sliced grilled chicken.

  8. Serve immediately.
