How To Make Roast Chicken Sticky Carrots

Ingredients
- 1 whole chicken
- 1 kg carrots, peeled and chopped
- 2 tbsp olive oil
- 3 tbsp honey
- 2 tbsp soy sauce
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 200°C (400°F).

In a large roasting pan, place the chicken and arrange the carrots around it.

In a small bowl, mix together the olive oil, honey, soy sauce, garlic, thyme, salt, and pepper. Brush this mixture all over the chicken and carrots.

Roast in the preheated oven for about 1 hour 30 minutes, or until the chicken is cooked through and the carrots are tender and sticky.

Baste the chicken and carrots with the juices from the pan every 20 minutes during cooking.

Once cooked, remove the chicken and carrots from the pan and let rest for a few minutes before serving.

Serve the roast chicken with the sticky carrots on the side.
