How To Make Creamy Curried Chicken Pie

Ingredients
- 2 cups cooked chicken, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 tbsp curry powder
- 1 cup frozen peas
- 1 cup chicken stock
- 1 cup heavy cream
- salt and pepper to taste
- 1 sheet of puff pastry, thawed
- 1 egg, beaten
Instructions

Preheat your oven to 375°F (190°C).

In a large skillet, sauté the onion and garlic in oil until softened.

Add the carrots and cook for another few minutes.

Stir in the curry powder and cook for 1 minute to release its flavors.

Add the diced chicken, frozen peas, chicken stock, and heavy cream to the skillet. Stir well to combine.

Season with salt and pepper to taste.

Simmer the mixture for 10 minutes until it thickens slightly.

Transfer the chicken mixture to a pie dish.

Roll out the puff pastry sheet and place it over the top of the pie dish, cutting off any excess pastry.

Brush the pastry with the beaten egg.

Bake in the preheated oven for about 30 minutes, or until the pastry is golden brown and crispy.

Allow the pie to cool slightly before serving.
