How To Make Coronation Chicken Salad

Ingredients
- 2 chicken breasts
- 1 tsp curry powder
- 1/2 cup Greek yogurt
- 2 tbsp mayonnaise
- 2 tbsp mango chutney
- 1 tbsp lime juice
- Salt, to taste
- Pepper, to taste
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 4 cups mixed salad greens
Instructions

Preheat the grill or oven to 400°F (200°C).

Season the chicken breasts with salt, pepper, and curry powder.

Grill or roast the chicken for 20-25 minutes, or until cooked through. Allow to cool, then shred into bite-sized pieces.

In a mixing bowl, combine the Greek yogurt, mayonnaise, mango chutney, lime juice, salt, and pepper to make the dressing.

Add the shredded chicken, raisins, and slivered almonds to the dressing. Mix well to coat.

Serve the coronation chicken salad on a bed of mixed salad greens.
