How To Make Chipotle Chicken & Slaw

Ingredients
- 4 boneless, skinless chicken breasts
- 2 chipotle peppers in adobo sauce
- 1 tablespoon adobo sauce
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1/4 cup mayonnaise
- 2 tablespoons Greek yogurt
- 1 tablespoon lime juice
- 2 cups thinly sliced cabbage
- 1 cup shredded carrots
- 1/4 cup chopped cilantro
- Salt and pepper, to taste
- 4 hamburger buns
Instructions

In a blender or food processor, combine the chipotle peppers, adobo sauce, lime juice, cumin, smoked paprika, garlic powder, salt, and pepper. Blend until smooth.

Preheat your grill to medium-high heat.

Season the chicken breasts with salt and pepper, then brush them with the chipotle mixture on both sides.

Place the chicken on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes.

In a small bowl, whisk together the mayonnaise, Greek yogurt, lime juice, salt, and pepper. In a separate bowl, combine the cabbage, carrots, cilantro, and the mayonnaise mixture. Toss to combine.

Toast the hamburger buns on the grill, if desired.

Assemble the sandwiches by placing a grilled chicken breast on the bottom half of each bun. Top with a generous portion of slaw and cover with the top half of the bun.
