How To Make Chipotle Chicken & Slaw

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 chipotle peppers in adobo sauce
  • 1 tablespoon adobo sauce
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/4 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 2 cups thinly sliced cabbage
  • 1 cup shredded carrots
  • 1/4 cup chopped cilantro
  • Salt and pepper, to taste
  • 4 hamburger buns

Instructions

  1. In a blender or food processor, combine the chipotle peppers, adobo sauce, lime juice, cumin, smoked paprika, garlic powder, salt, and pepper. Blend until smooth.

  2. Preheat your grill to medium-high heat.

  3. Season the chicken breasts with salt and pepper, then brush them with the chipotle mixture on both sides.

  4. Place the chicken on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes.

  5. In a small bowl, whisk together the mayonnaise, Greek yogurt, lime juice, salt, and pepper. In a separate bowl, combine the cabbage, carrots, cilantro, and the mayonnaise mixture. Toss to combine.

  6. Toast the hamburger buns on the grill, if desired.

  7. Assemble the sandwiches by placing a grilled chicken breast on the bottom half of each bun. Top with a generous portion of slaw and cover with the top half of the bun.

  8. Serve immediately and enjoy!
