How To Make Aromatic Chicken with Sultanas

Serves:

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup sultanas
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.

  2. Heat olive oil in a large skillet over medium heat.

  3. Add the chicken breasts and cook until browned on both sides. Remove from the skillet and set aside.

  4. In the same skillet, add the chopped onion and minced garlic. Cook until the onion is soft and translucent.

  5. Add the ground cumin, ground coriander, ground turmeric, and ground cinnamon to the skillet. Cook for 1-2 minutes, stirring constantly to release the flavors.

  6. Add the sultanas and chicken broth to the skillet. Stir well to combine.

  7. Return the chicken breasts to the skillet, along with any juices that have accumulated. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the chicken is cooked through.

  8. Remove the chicken breasts from the skillet and place on a serving platter.

  9. Increase the heat to medium and cook the sauce for an additional 5 minutes, or until slightly thickened.

  10. Pour the sauce over the chicken breasts and garnish with fresh cilantro.

  11. Serve the aromatic chicken with sultanas hot with steamed rice or naan bread.
