  • 2 medium zucchinis, grated
  • 1 cup corn kernels
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh cilantro
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, lightly beaten
  • Vegetable oil for frying


  1. Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture.

  2. In a large bowl, combine the grated zucchini, corn kernels, flour, Parmesan cheese, cilantro, green onion, garlic powder, salt, and black pepper. Mix well.

  3. Add the beaten eggs to the zucchini mixture and stir until combined.

  4. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.

  5. Drop spoonfuls of the zucchini mixture into the hot oil and flatten slightly with the back of a spoon.

  6. Cook the fritters for 2-3 minutes per side, or until golden brown. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

  7. Repeat with the remaining zucchini mixture until all the fritters are cooked.

  8. Serve the zucchini corn fritters hot with your favorite dipping sauce.
