Ingredients

  • 3 medium beets, peeled and chopped
  • 1 inch ginger root, peeled and chopped
  • 2 cups water
  • 2 tbsp honey (optional)
  • Ice cubes
  • Mint leaves for garnish

Instructions

  1. Add the beets and ginger to a blender with water.

  2. Blend until smooth and strain the juice through a fine-mesh sieve.

  3. Add honey if desired.

  4. Pour over ice and serve with a garnish of fresh mint leaves.
